Chicken Enchiladas... yum







Okay, I'm just gunna come out & say it... I'm no Betty Crocker. Honestly, I was never taught how to cook so I never really was interested in wanting to learn. My poor husband has been suffering long enough through countless boring meals, so I have decided to try new things. This time it's Chicken Enchiladas... I know, I know, no big deal, right?! All of ya'll can probably make PERFECT enchiladas, well poo on you! HAHA. I'm learning so hush. :)

The recipe I used was something simple I got off the internet (Betty Crocker webiste to be exact haha) which called for Cream of Mushroom soup. Didn't really think much of it until I was spreading it on & Cody goes "Don't you use Cream of Chicken?" Hm. Who knows?! I sure as heck don't. So I keep on spreadin'.

Needless to say, they turned out pretty scrumptious... I made some rice & powdered sugar strawberries, yum.
So my first "grown up" recipe turned out pretty good. Next time, I will used the other soup though.
Just wanted to share with ya'll my wife-ly experience. I'm proud of myself. :)

    Making dinner at home is cheap and it gives the cook a sense of satisfaction that going out doesn't lend.
    I have TONS of delicious, amazingly simple recipes for a busy house. I can start sending you some if you are interested?
    We had home made pizza tonight (remember when I'd make that for you guys when you were little? Hot dog pizza anyone?) with pork sausage, tomato sauce and gobs of cheese. Mmmmmmm.

  2. We have been STINK'N busy. Plus Tim's home and since I'm not really a writer it takes me a loooong time to blog a few paragraphs. (The words don't just flow from the computer keys. It's a struggle to write. I'm a much better talker than writer.) Plus the weather has been amazing! So put all that together and that means no inside-the-house blogging. But I think I'll be able to catch up a little tonight. After I fold a mountain of clothes.

    How was your birthday?
    Sorry you had to work. Sometimes it's nice though because then you get a little birthday greetings from those at work AND those at home. Hope all is well there.

  3. way to go!! You can use either soup. I'm a big fan of that recipe. Check out kraftfoods.com they have some one-pot recipes that are great!
